Buffalo Chicken Wings Recipe

Ingredients

  • 2 pounds chicken wings, split at joints, tips discarded
  • 1 tablespoon baking powder
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon garlic powder

Buffalo Sauce:

  • 1/2 cup hot sauce (such as Frank’s RedHot)
  • 1/4 cup unsalted butter
  • 1 tablespoon white vinegar
  • 1/4 teaspoon Worcestershire sauce
  • 1/4 teaspoon cayenne pepper (optional)

For Serving (Optional):

  • Celery sticks
  • Blue cheese or ranch dressing

Directions

  1. Preheat oven to 425°F (220°C).
    Line a baking sheet with foil and place a wire rack on top. Lightly spray the rack with cooking spray.
  2. Prepare the wings:
    Pat chicken wings dry with paper towels. In a large bowl, toss wings with baking powder, salt, pepper, and garlic powder until evenly coated.
  3. Bake the wings:
    Arrange wings in a single layer on the wire rack. Bake for 40–45 minutes, flipping halfway through, until wings are crispy and golden brown.
  4. Make the Buffalo sauce:
    While wings bake, melt butter in a small saucepan over low heat. Stir in hot sauce, vinegar, Worcestershire sauce, and cayenne pepper. Simmer for 2–3 minutes, then remove from heat.
  5. Toss wings:
    Transfer baked wings to a large bowl and pour Buffalo sauce over them. Toss until fully coated.
  6. Serve:
    Serve immediately with celery sticks and blue cheese or ranch dressing on the side.
