Ingredients
- 2 pounds chicken wings, split at joints, tips discarded
- 1 tablespoon baking powder
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1/2 teaspoon garlic powder
Buffalo Sauce:
- 1/2 cup hot sauce (such as Frank’s RedHot)
- 1/4 cup unsalted butter
- 1 tablespoon white vinegar
- 1/4 teaspoon Worcestershire sauce
- 1/4 teaspoon cayenne pepper (optional)
For Serving (Optional):
- Celery sticks
- Blue cheese or ranch dressing
Directions
- Preheat oven to 425°F (220°C).
Line a baking sheet with foil and place a wire rack on top. Lightly spray the rack with cooking spray. - Prepare the wings:
Pat chicken wings dry with paper towels. In a large bowl, toss wings with baking powder, salt, pepper, and garlic powder until evenly coated. - Bake the wings:
Arrange wings in a single layer on the wire rack. Bake for 40–45 minutes, flipping halfway through, until wings are crispy and golden brown. - Make the Buffalo sauce:
While wings bake, melt butter in a small saucepan over low heat. Stir in hot sauce, vinegar, Worcestershire sauce, and cayenne pepper. Simmer for 2–3 minutes, then remove from heat. - Toss wings:
Transfer baked wings to a large bowl and pour Buffalo sauce over them. Toss until fully coated. - Serve:
Serve immediately with celery sticks and blue cheese or ranch dressing on the side.
