Ingredients
- 1 (12-14 pound) frozen turkey, thawed
- 1/2 cup unsalted butter, softened
- Salt and pepper, to taste
- 1 onion, quartered
- 1 carrot, chopped
- 2 stalks celery, chopped
- 4 cups chicken broth
- 1 tablespoon dried thyme
- 1 tablespoon dried rosemary
- 1 tablespoon dried sage
Directions
- Preheat your oven to 325°F (165°C).
- Remove the giblets and neck from the turkey cavity. Rinse the turkey inside and out, then pat it dry with paper towels.
- Rub softened butter all over the turkey, including under the skin, and season generously with salt and pepper.
- Stuff the cavity with the quartered onion, chopped carrot, and celery.
- Place the turkey breast side up on a rack in a roasting pan. Pour chicken broth into the pan.
- Sprinkle thyme, rosemary, and sage over the turkey.
- Cover the turkey loosely with aluminum foil and roast in the preheated oven for about 2 hours.
- Remove the foil and continue roasting for an additional 1 hour, or until the internal temperature reaches 165°F (74°C) in the thickest part of the thigh.
- Once done, remove the turkey from the oven and let it rest for at least 20 minutes before carving.
